We went through more than 50 steaks until we developed this foolproof technique that delivered both a flavorful crust and a juicy, rosy interior. The secret? Bake first, sear last.

Upside-Down Cake Showdown

Can apples change your perspective on upside-down cake?

Before the introduction of canned pineapple in the early 1900’s, upside-down cake was the domain of seasonal fruit such as apples. And the recipe couldn’t be simpler: pour melted butter and brown sugar into a pan or skillet, add sliced apples, spread batter over them, and bake. The apples caramelize on the bottom of the pan, revealing a burnished amber fruit when the cake is upturned. Unfortunately, the apple slices in our cakes were bland and watery. Adding more apples added needed flavor, but flooded the cake with even more unwanted moisture. But then we used this surprisingly simple technique we developed when facing a similar dilemma with our Deep-Dish Apple Pie recipe, and then making perfect Apple Upside Down Cake was easy as pie.
